Sweet and Sour cabbage

Cabbage is a great all round vegetable but we find people tend to run out of ideas as to what to do with it.  There are the usual coleslaw or boiled dinner ideas, but cabbage can be used in so many more places.  The more brave may make Kimchi, sauerkraut, or cabbage rolls. 

Swwet and Sour cabbage is a great addition to a dinner as seen in this photo.  

1 medium head Cabbage
1 large     Shallot or medium onion, chopped
2 tsp       Rosemary, fresh - or 1 tsp dry
1 cup       Wine - white is best, but Shiraz is good as well
1/4 cup    Apple cider vinegar
1/4 cup    Brown sugar, packed
1/2 tsp    Salt
Oil

A broad pan is best for this recipe. Pour enough oil in pan to lightly
coat bottom and heat over med-high heat.
Add chopped shallot or onion and rosemary and cook until starting to
turn translucent.  Meanwhile, core the cabbage and slice and separate it.  Add to pan along with wine, vinegar, brown sugar and salt.  Reduce heat to medium to avoid scorching.  Cook until cabbage is soft and well cooked.  For this amount, allow about 30 - 45 minutes. Add more of any of the ingredients to adjust the flavor.  This should be a good balance of sweet and sour.
Serves 6 - 8.
